Chicken Bacon Spinach Salad

Dinner Idea! This is what I did for dinner last night, and it was GENIUS and easy! I started with some good old antibiotic free, hormone free, grass fed, free range (enough descriptors?!) chicken breasts and the Applegate Naturals Bacon. I trimmed the chicken and cut it into smaller "bite" size pieces. I wrapped the chicken pieces in bacon and then I pan fried them to "seal"the bacon wrap. While I did all of that my oven preheated to 400 degrees Fahrenheit. Once they were "sealed", I put them in a glass dish and baked them uncovered for about 25min until the bacon was transluscent and the fat was rendered. I drained the fat and then I broiled them on low for 5min to crisp the bacon. Afterwards I served my little bacon bites over a spinach salad and had some cucumbers on the side. Delicious, not WHOLE30, but Clean! Try it, it's yummy! I've also done it with a piece of jalapeno wrapped in the chicken pre-bacon, even better :) Enjoy!
